Caprese Salad with Balsamic Chicken

Tomato, Mozzarella, Sweet and Tangy Balsamic Marinated Chicken. Another great combo to welcome in the summer!


When you sauté the chicken, the balsamic caramelizes, creating a sweet and savory party in your mouth!


Fresh. Simple. Fast. Delish.


Enjoy as is or throw on top of whatever greens you have in the fridge. I've done both arugula and spinach, both hold up well.

Ingredients:

  • 1 pound chicken breast

  • 1 tsp dried rosemary

  • ½ tsp salt

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • ¾ c balsamic vinegar


Directions:

  • Crush rosemary with mortar and pestle and combine with salt, garlic powder, onion powder, and balsamic in a large sealable plastic bag.

  • Dice chicken into ~1 inch cubes. Marinate for 1 hour up to 1 day.

  • Sauté chicken on medium high heat until cooked through. Chicken will look dark quickly – that’s just the balsamic caramelizing!

  • Build salad and enjoy!
