Chocolate Strawberry Oat Bites

leighannewooten

With such few ingredients, I had my doubts. But, trust me – the sweetness from the baked strawberry combined with the little bites of chocolate?

C’est magnifique!

And they just so happen to be:

  • Vegan

  • Allergen Friendly

  • Easy for the kids to help prep

  • Super-fast to make

  • Made from ingredients you probably already have on hand!

  • Great for breakfast, snack or dessert!

Bon Appetit!

Ingredients:

  • 2 very ripe bananas

  • 2 cups oats (gluten free if needed)

  • 2 tsp pure vanilla extract

  • 1/3 cup dark choc chips

  • about 6 ripe strawberries

Directions:

  • Preheat oven to 375°F and line a baking sheet with parchment paper. In a medium bowl, mash banana with the back of a fork until there are minimal lumps. Mix in vanilla, oats, and chocolate chips.

  • To make strawberry hearts, cut a V shape in the top of the strawberry to remove the leaves. Then, slice strawberry in half lengthwise to make two hearts.

  • Form mixture into balls with hands and place on lined baking sheet. Lightly press flat. Add one strawberry on top lighting pressing down.

  • Bake for 15 minutes. Let cool on the pan for 5 minutes. Enjoy!

Cook's note: They taste best still warm from the oven, but can be refrigerated for munching on later!
