Healthy Tropical Dragon Fruit Smoothie

leighannewooten

Dragon fruit is a new favorite in our house. I'm pretty sure it's a combo of the the name (Griffy loves dragons) and the color (pink is Ami's favorite)!

It has a subtle sweetness with a hint of earthy pepper when you bite into the tiny seeds. We added mint, pineapple, mango, chia, and lime Greek yogurt to our smoothie to create a tropical flavor profile, and really amp up the nutrition!

Bon Appetit!

Ingredients:

  • 12 oz water

  • 6 mint leaves

  • 1-2 pineapple spears

  • 1/2 cup frozen dragon fruit (we used Pitaya)

  • 1/2 cup frozen mango

  • 1 Tbsp chia seeds

  • 1 container lime Greek yogurt (we used Siggi's)

Directions:

Add ingredients to blender in the order listed above. Blend on high for about 1 minute or until blended.
