Monkey Oats

The kids were NOT HAPPY when they came down for breakfast and saw this ‘weird looking’ new concoction, but then I made this whole story up about how the kids were monkeys and I had made them MONKEY OATS for breakfast. Because it is, OF COURSE, what monkey's eat!


I added mashed banana and sunflower butter to these overnight oats, making it the perfect monkey meal!


BTW - it was delicious, tasted like a banana oat muffin!

Ingredients:

  • 1 mashed banana

  • 2 cups milk of choice

  • 2 tsp vanilla

  • 2 Tbsp sunflower or nut-butter of choice

  • 1 cup oats

  • 1/4 cup chia seeds

  • Fruit of choice for topping

Directions:

  • Mash banana in a medium bowl.

  • Add milk, vanilla and suflower or nut butter, and stir until combined.

  • Add oats and chia. Stir again, cover and refrigerate overnight.

  • Dish up in the morning and top with fruit of choice.
